F:356rnWhat you will need:FOR THE SHORTBREAD: 180g butter, softFOR THE ICING: 50g butter, soft 2 tsp (10mL) milkFOR THE SHORTBREAD:Preheat oven to 180°C (160°C fan forced). Line a baking tray with baking paper.Place butter into a mixing bowl and beat with an electric mixer on medium speed until creamy and light.Add shortbread mix into the mixing bowl and mix with electric mixer on low speed until the dough comes together.Divide the dough evenly into 24 pieces and roll into balls. Place dough balls on the prepared tray; press down lightly with a fork.Bake for 20 minutes or until slightly golden at the edges. Allow shortbread to cool slightly on the trays before transferring to a wire rack to cool completely.FOR THE ICING:Add the icing mix, butter and milk to a mixing bowl and beat with an electric mixer on high until creamy.Spread the icing on the flat side of 12 halves. Use the remaining non-iced halves to sandwich the iced shortbread.*Note: Cooking temperatures and times are provided as a guide.
